Spring Lemon Meringue ...with a twist.

 

Our Spring recipe should be perfect for when the sun is shining and Easter is approaching - or in our case, just behind us. With the weather being as rubbish as it is this Spring, this recipe is perfect for bringing a little bit of much needed sunshine and smiles into all of our lives. 

All you need is a box of our Ooomeringue Simply Plain Nests (Lemon or Raspberry would also work well), softly whipped cream (250ml), a dollop of lemon curd and a topping of your choice – we love edible sugar flowers, sugared lemon segments but if you can manage more,  Easter chocolate – Mini Eggs for the children or any big kid!

You can of course buy your favourite Lemon Curd from any Supermarket, Farm Shop or Deli, but it is super easy to make.

 

Lemon Curd:

  • 4 Lemons
  • 4 Eggs (yolks only)
  • 110g Unsalted Butter
  • 450g Caster Sugar

To make place a heatproof bowl over a pan of simmering water. Add the egg yolks, sugar, lemon juice and zest to the bowl and whisk. Gradually add the butter – stirring continually until it thickens – when it is ready it should coat the back of a spoon. Pour into a jar and leave to cool before using. This recipe will make quite a lot, any leftovers can be refrigerated.  

Now the easy bit, putting it all together! ...dig out a serving plate and empty your packet of Ooomeringes. dollop whipped cream and lemon curd onto each individual mini pav and decorate with as much or as little of that topping of choice - our is always mini eggs, and lots of them!
